Chicken, Fig & Blue Cheese Panini


I love my panini maker, I'd say it's one of the wedding gifts we have gotten the most use out of. It's great for making sandwiches a little more exciting, it makes them taste better, trust me.   In my quest to use up the fig paste I still had from these fig crumbles, I made a chicken, fig, and blue cheese panini, and it was a great combination.  The blue cheese really complements the sweet fig paste. Keep reading for the recipe.

Ingredients
French Bread (you could use ciabatta or any harder roll). sliced lengthwise
Chicken Cutlets or Chicken Breast
Blue Cheese
Fig Paste or Jam
Mixed Greens

Directions
Season chicken cutlets with salt and pepper and cook. I cooked mine on a grill pan, for about 4 minutes on each side (until they were cooked through). Slice chicken and assemble chicken, blue cheese, mixed greens on bottom half of bread. Spread fig paste on top half  of bread and place on the assembled bottom.  Place it in the panini press and heat through about 4 to 5 minutes. If you don't have a panini press you could heat it in a stove stop pan or grill pan, and use a lid or spatula to press down.
