It's that time of year when I can always find fresh tomatoes and sweet corn the cob at the farmers market. They both taste great on their own, but you'll see me cutting the corn off of the cob and throwing it in a lot of dishes this summer. Tonight I decided to make this simple and refreshing stacked tomato and onion salad that allows you to enjoy the flavors of both.

Corn and Tomato Scramble
This corn and tomato scramble from Epicurious is one of my favorite side dishes, especially when I can find some fresh corn on the cob (which I didn't this time, but it's still tasty). The only changes I make to this are using balsamic vinegar instead of cider vinegar, I also try to use about a 1/2 to 2/3 of the butter it recommends, and sometimes I throw in avocados. As soon as you can find corn on the cob at your market, do yourself a favor and make this.

Sliced Steak with Herbs, Bacon Horseradish Mashed Potatoes, Creamed Spinach Stuffed Tomatoes
I don't normally watch Rachael Ray, but I happened to turn it on for this episode and knew it was a meal my husband would love. I was right.
