Naan Pizza



I made two variations of naan pizza for dinner last night; one meatball and spinach (because I had some leftover meatballs begging to be eaten in the freezer) and one zucchini, tomato, and onion. Both were really tasty and it was tough deciding which one I wanted a second slice of, so I opted for both.

Naan pizzas are a great solution if you don't know what kind of pizza to make, the smaller size allows you to make several different kinds and it's quicker and easier than making pizza dough. If you can't find naan, use flatbread. Below are the ingredients and directions, but you can of course use any combination that inspires you.  I also refer to 'grilling', but I live an apartment so am forced to use a grill pan which doesn't give the taste that a real grill does.

Herb Crusted Rack of Lamb



It's going to be a hectic week of eating leftovers and takeout, so I thought I'd share this lamb recipe from Cooking Light that I made this summer.  Lamb is delicious, and this is an easy recipe that would be perfect to serve to any meat lovers you have over for dinner.  Since it was summer time and Jersey tomatoes and sweet corn were fresh, I layered sliced tomatoes, onions, avocado, and corn (cut off the cob) to have on the side.

Honey and Soy Glazed Salmon



This doesn't look pretty, but it sure tastes good (please note I took this picture before reading the link on food photography I posted below).  This recipe makes a regular appearance in our apartment.  The only change I make is that I throw onions in the pan when I cook the Salmon, which results in slightly burnt onions, an ugly photo, and a very tasty dinner.  I usually serve it over rice and with a side of edamame.  It's a very quick and easy weeknight meal.

Ham Fried Rice


With some leftover ham from Easter, Ham Fried Rice was for dinner tonight.  The fried rice had ham (of course), 1 egg, shelled edamame, onions, and sesame seeds.  In addition to soy sauce I always add a decent amount of Sriracha for some heat.  I also use my mister to try to reduce the amount of oil in the recipe.
