Lake Norman Vacation Wrap Up

Okay one last post to wrap up the fun and food from our Lake Norman vacation, and then I promise to move on. You just have to promise not to judge me because of the lack of flow in this post. This will be mostly about the fun since I already covered a lot of the food, and since it's Friday I'll top it off with a cocktail.

As I mentioned in the first Lake Norman post we spent a lot of time on the water, this included my husband getting up on water skis for the first time.


I managed to get up wakeboarding.


but didn't get this sweet sunset shot like my sister-in-law did.


or catch air like my brother did.


My niece jumped off the dock about 50 times a day.


and it pooped her out.


The guys did a little fishing and my grandpa caught a catfish.


and had some celebratory drinks (or at least pretended to).


Now a little bit more about the food and drink. I shared a lot of the food highlights the last several posts; ribs and wings nightfajita nightmy mom's famous bbq brisketgrilled polenta cakesa frittata, and the spicy pasta salad I'm addicted to.

I tried The Pioneer Woman's Avocado Egg Salad, and I really enjoyed it in a sandwich with a slice of tomato. Keep in mind this is coming from someone who has never eaten egg salad before and loves avocados, but I'd recommend making this.


Now for a couple ideas you should use this weekend. You should soak some peaches in bourbon and then put those soaked peaches over butter pecan ice cream.  I recommend you cut the peaches up into smaller pieces than I did, as they gave quite a kick in the size I had, you live and you learn.


And with the bourbon you were soaking the peaches in or just the rest of the bourbon in the bottle, make some peach mint juleps.  To make a peach mint julep, muddle (I didn't have a muddler so mine looks a little different) 5-8 mint leaves and a few slices of peaches together, and put in a glass filled with ice. Add about 1 teaspoon sugar, pour bourbon into glass, topping off with club soda. Garnish with another mint leaf.
