For my wedding shower last year my bridesmaids requested everyone fill out a recipe card and give me one of their favorite recipes. Appropriate, right? I loved it, it fed my recipe addiction. My maid of honor, Amanda, gave me this recipe for chocolate chip banana bread and it's so tasty and moist, I've made it several times since my shower.
I always seem to have really ripe bananas laying around that usually end up going towards smoothies, banana pancakes, or banana bread. This weekend I had some realllllllly ripe bananas that were way beyond any use in smoothies, which makes them perfect for banana bread. Keep reading for the recipe.
Ingredients
1 cup granulated sugar
4 oz. butter, softened
1-1/2 cups really ripe bananas, mashed (approximately 3 bananas)
2 eggs
2 teaspoons vanilla extract
2 cups all purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chips (adjust according to how much chocolate you are craving)
Directions
Preheat oven to 325 degrees.
In mixer, cream sugar and butter together. Add in mashed bananas, eggs, & vanilla and mix until combined.
In a separate bowl, mix dry ingredients together, then stir into mixer with wet ingredients until just moistened. Stir in chocolate chips.
Grease and flour 9x5x3 inch loaf pan, pour in batter and loosely cover with tented foil. Bake for 30 minutes, remove foil and continue baking for 30-40 more minutes, or until a wooden toothpick stuck in the middle comes out clean.
Cool for 10-20 minutes, and remove from pan. Amanda's recipe said to cool completely before slicing, but I have no self control so I slice at least a little off before it's cooled completely.
